Cold cucumber salad


This is one of my all-time favourite recipes that my mom use to whip up in less than 3 minutes. I would pick at the cucumber pieces as she was assembling the dish, and that first cold 'crunch' of the chilled dill cucumber always had me trying to sneak another piece... and another piece.... and another. Hm. Maybe that's why she took only 3 minutes to put the salad together. This recipe combines very simple, raw and fresh ingredients, tumbled together and eaten cold.

Ingredients:
6 fresh dill cucumbers, chilled and diced
2 cloves fresh garlic, minced
1/2 tsp chili flakes, chopped finely
1 tbsp soy sauce
1 1/2 tbsp rice wine vinegar
1 tbsp sesame seed oil
salt to taste

Put all the ingredients into a large tupperware with leak proof lid and shake. Enjoy!
