Flourless chocolate cake



After breakfast, heading off to work, I've got an ambitious dinner menu swimming around in my head: baked seafood fried rice (in cast iron), tilapia baked in salt shell, creamed spinach with goat cheese, lemon roasted root vegetables, and a flourless almond chocolate cake. Of course, at the end of the day, when most of the energy is drained, the only item on my menu is the flourless cake and boy am I glad I made it :)

This cake has actually been in my mind since a month ago after seeing two very delicious recipes (see blog links below). The recipe is adapted from Kirbie's Cravings and Oishii Treats (do check out their site/recipes - their pictures are drool-making). It is simple and delicious, and definitely something I will make for friends and family!  

Ingredients:
7 tbsp unsalted butter
3/4 cups packed brown sugar
100g good quality 70% chocolate
1 tsp vanilla extract
1/4 cup cocoa powder
1/2 cup ground almonds

2 large eggs, yolks and whites separated

Preheat oven to 350 F.

In a double boiler, mix together butter with sugar, chocolate, and vanilla. Combine with cocoa powder and almonds until smooth. Take chocolate mixture off heat and let cool for a few minutes. Add egg yolks and mix until homogeneous.

In a separate bowl, whisk or beat egg whites until soft peaks form. I recommend using an electric mixer, or if you would like an awesome arm work out for 30 minutes, whisk by hand.

Gently fold egg whites into chocolate mixture and pour into a greased spring form pan. Bake for 20 minutes or until a toothpick inserted comes out clean.
